1 cup old-fashioned oats
1 cup whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup packed brown sugar
3/4 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 cup blueberries
In a small bowl, combine the oats, flours, baking powder and salt. In another bowl, beat the eggs, brown sugar, milk, oil and vanilla. Stir in dry ingredients until well mixed. Stir in blueberries.
Fill greased (or paper-lined) muffin cups two-thirds full. Bake at 400 degrees for 15-17 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

We had some leftover batter and just put it all into a small corningwear dish. We had to bake it a little longer (20 or so minutes), but it turned out great. Next time we do this, I think we're going to make a loaf of bread instead of the muffins.
